Chicken Picatta is a delicious lemony Italian dish made with chicken breast. Picatta is a method of cooking in a sauce with lemon and butter. Thinly sliced chicken breast in a flavorful lemon sauce is very easy to make and will have you wanting more.

When I lived in Italy due to my time as an enlisted service member of the United States Navy I never had chicken piccata while there. The traditional Italian menu includes antipasto (translates as “before the meal”); The Primo (first course) is pasta; the secondo (the main course) includes the meat (chicken, fish, veal) and side dish of vegetables (the contorno) and finally the dolce or dessert.

I always order Chicken Piccatta when I eat at Italian restaurants in the states and it is truly my favorite, so I decided to learn how to make the dish at home. It’s a perfect addition to my home made pasta.

Ingredients

  • 2 Chicken Breast (sliced in half horizontally)

  • 3/4 tsp. Salt

  • 3/4 tsp. Pepper

  • 3/4 cup All Purpose Flour

  • 2 Tbsp. Olive Oil

  • 5 Tbsp Butter

  • 1/2 cup White wine or Chicken Broth

  • 2 Tbsp. Lemon Juice

  • 2 Tbsp. Capers

  • 2 Tbsp. Unsalted Butter

  • 2 Tbsp. Chopped Parsley for garnish (optional)

Directions

  • Slice chicken breast in half horizontally.
  • Place between plastic wrap and gently pound flat
  • Season with salt and pepper
  • Dredge chicken in flour
  • Heat oil and butter in pan
  • Place chicken in the pan being careful not to crowd
  • Cook until slightly brown on both slides
  • Remove chicken and save the oil for the sauce
  • Lemon Sauce
  • Add wine or broth, lemon juice, and capers on medium heat, until it reduces by half
  • Add chicken and cover with sauce.
  • Add lemon slices and serve immediately
