When I lived in Italy due to my time as an enlisted service member of the United States Navy I never had chicken piccata while there. The traditional Italian menu includes antipasto (translates as “before the meal”); The Primo (first course) is pasta; the secondo (the main course) includes the meat (chicken, fish, veal) and side dish of vegetables (the contorno) and finally the dolce or dessert.
I always order Chicken Piccatta when I eat at Italian restaurants in the states and it is truly my favorite, so I decided to learn how to make the dish at home. It’s a perfect addition to my home made pasta.
Ingredients
2 Chicken Breast (sliced in half horizontally)
3/4 tsp. Salt
3/4 tsp. Pepper
3/4 cup All Purpose Flour
2 Tbsp. Olive Oil
5 Tbsp Butter
1/2 cup White wine or Chicken Broth
2 Tbsp. Lemon Juice
2 Tbsp. Capers
2 Tbsp. Unsalted Butter
2 Tbsp. Chopped Parsley for garnish (optional)
Directions
- Slice chicken breast in half horizontally.
- Place between plastic wrap and gently pound flat
- Season with salt and pepper
- Dredge chicken in flour
- Heat oil and butter in pan
- Place chicken in the pan being careful not to crowd
- Cook until slightly brown on both slides
- Remove chicken and save the oil for the sauce
- Lemon Sauce
- Add wine or broth, lemon juice, and capers on medium heat, until it reduces by half
- Add chicken and cover with sauce.
- Add lemon slices and serve immediately
