4 Cups Potatoes (mashed)
2 Sticks Butter
3.4 Cup Sugar
3/4 Cup Brown Sugar (packed)
1 cup Milk
3 Eggs slightly beaten
2 tsp Vanilla
1 1/4 tsp Cinnamon
1/4 tso Nutmeg
Directions
- Preheat oven to 325 degrees
- Boil the potatoes until tender
- Mash sweet potatoes
- Add butter and allow to melt
- Add sugar, cinnamon, nutmeg, and vanilla
- Slightly beat eggs and mix in potato mixture
- Beat with a stand or hand mixer to ensure the potato mixture is pureed
- Pour equal amounts into pie crust
- Bake for 1 hr and 30 min or until center is not shaking
- Serve cool, top with whip cream (optional)
